We"re all busy and there are many times and situations when we want to prepare a meal, or even just a snack, in a short time.

Whether you"re rushing into the kitchen after work – returning home after ferrying children to after–school activities – finishing various home–based projects – or have just fed and bedded babies and toddlers, it is unlikely that you want to spend long in the kitchen. If you have asked friends to a meal, you"ll want to spend as much time with them as possible, rather than slaving over a hot stove!

We hope to show that you can produce a remarkably wide range of good, Interesting dishes in twenty minutes or less – without depending on processed, ready–to–eat foods or resorting to takeaways. (After all, 20 minutes is often less time than it takes to go out and buy takeaways.) Regardless of your cooking abilities, whether you need to make a few snacks to enjoy with friends over a drink, want a comfort–food style family meal, or are preparing a more elaborate three–course meal for guests, we hope you will find inspiration and solutions in this book.

In the past it was safe to assume that most households comprised two adults and two children – however, current statistics show that this is no longer the case. As a result, in some recipes we have given quantities for two or three adults and sometimes three or more. If you"re using one of the recipes for two, but are cooking for a larger group, just multiply the ingredients accordingly, but bear in mind it may take a little longer to prepare and/or cook. (Before you halve recipes, stop to think whether it would be better to cook the larger quantity and refrigerate the part you don"t want immediately. The "leftovers" can make nearly instant fast food.)

It is always hard to know exactly how long it takes someone else to prepare food. We know these recipes well, and know each dish can be made in 20 minutes or less (barring distractions by the phone, kids, etc.). When you make a recipe for the first time, it may take considerably longer than it will after you"ve made it a couple of times. Persevere and you"ll be surprised just how quickly many of these recipes can be made.

While many of our desserts and treats can be made from start to finish and be ready to eat in 20 minutes, we have also included a few which are quick to prepare but need to be left (looking after themselves) to set in the refrigerator or to cook in the oven while you eat your main course.

This said, here are a few tips to help you speed up preparation:
  • Read your recipe and check what you already have before you go shopping.
  • Read the recipe from beginning to end, before you start.
  • Get out all the ingredients you need and arrange them in the order in which you will use them.
