(After all, 20 minutes is often less time than it takes to go out and buy takeaways.) In the past it was safe to assume that most households comprised two adults and two children – however, current statistics show that this is no longer the case. As a result, in some recipes we have given quantities for two or three adults and sometimes three or more. If you"re using one of the recipes for two, but are cooking for a larger group, just multiply the ingredients accordingly, but bear in mind it may take a little longer to prepare and/or cook. (Before you halve recipes, stop to think whether it would be better to cook the larger quantity and refrigerate the part you don"t want immediately. The "leftovers" can make nearly instant fast food.) It is always hard to know exactly how long it takes someone else to prepare food. We know these recipes well, and know each dish can be made in 20 minutes or less (barring distractions by the phone, kids, etc.). When you make a recipe for the first time, it may take considerably longer than it will after you"ve made it a couple of times. Persevere and you"ll be surprised just how quickly many of these recipes can be made. While many of our desserts and treats can be made from start to finish and be ready to eat in 20 minutes, we have also included a few which are quick to prepare but need to be left (looking after themselves) to set in the refrigerator or to cook in the oven while you eat your main course.
