There"s nothing I enjoy more than being fully immersed in the process of creating and cooking recipes that provocatively engage all the senses. With this book, my desire is to present a style of food that reflects how I love to cook, and to illustrate some of the ways I like to entertain.The book is a compilation of recipes of fashionable food popularised by modern cafe menus, rather than the food of anyone cafT in particular. Daytime cafe food is smart, enticing, tasty, very adaptable and truly easy to reproduce in your own kitchen. Through the pages of this book, I reveal how to recreate the food and communal culture of a neighbourhood cafe @ home. I"ve used my knowledge as a chef and former cafe owner to formulate recipes that show just how simple cafe–style food is to cook at home. This is clever yet uncomplicated food, and a way of eating that we can all embrace. . From having owned several successful cafes and cooked in many professional kitchens, I know that for the home cook there is much to be learnt from cafe systems. My advice is to follow the lead of short–order chefs and use quality ingredients simply and well. Respect seasonal produce and focus on producing clean, clear flavours. The trick is to plan and prep a little in advance, and then any number of dishes can be achieved with ease. Some of these recipes will take a little time to prepare, but most are designed to produce good food fast, without jeopardising quality, taste or texture. . I find creating attractive settings for food extremely satisfying. I love to search shops for culinary–related items of beauty. Most of all, I love to use my own favourite belongings, such as new and old utensils, crockery, cutlery, cooking and serving bowls. It"s silly to have these items sitting on display or hidden in a cupboard when using them gives so much pleasure. I encourage you to do the same, as you"ll find visual presentation, as well as taste, is an important aspect of good food. When I entertain in the daytime, I favour relaxed, informal table settings, though I always like to add a few nice touches to make each gathering extraordinary. With or without a special occasion to celebrate, I make each shared meal memorable by decorating the table or setting the scene in some way. I use colourful napkins, eclectic china, a posy of flowers from the garden, and meaningful arrangements of objets d"art to create ambience and express the individuality of each occasion. I don"t own a formal tablecloth, but I do find that singularly interesting lengths of fabric lend themselves to this purpose beautifully so I either vaguely hem or fray the edges to good effect.
