Extract

To me, Christmas means a happy family gathering with excited children, the exchange of pretty gift–wrapped packages beside a decorated tree, and seasonal food to be enjoyed with friends and family.

Although Christmas is a very busy time of year, especially for those organising families and their food, most of us remember fondly the traditional foods which our mothers, aunts and grandmothers produced each year. If you think that these may be outdated, look at the wide range of traditional Christmas foods on sale in good food and gift stores, and you will realise that this is certainly not the case.

After you have admired the store foods in their attractive packaging, take a look at the price tags attached! These will probably make you realise that, by making Christmas treats as gifts for your extended family and friends, you will be giving personalised and practical gifts of considerable worth, which display your skills, and are sure to be used and appreciated.

I hope that the recipes in this book will whet your appetite and inspire you! Many of the foods may be made some time before Christmas, before the inevitable last minute rush. A few recipes require special skills, but many are suitable for children to make by themselves, or with a little help from you. I hope that you will encourage this participation, so that even young children realise that Christmas is a time for shared family activity and hand–made gifts – for giving, as well as receiving!

For maximum impact, present your gifts attractively. Consider reusable containers, such as glasses, decorative jars, baskets and boxes, muffin or cake pans, and even tea towels. Make good use of ribbons and wraps, and don"t forget to add creative, informative and fun labels!

I hope that the foods from this book which you cook, enjoy yourself, and give to others, will make Christmas an even happier time for you and your families!

Before you make your Christmas Cake

There"s more to a successful Christmas cake than just a recipe! A perfectly reliable recipe can fail if you misinterpret or modify the instructions.

Where and how you store your cake is important. Get it right! Incorrect storage can spoil your cake. In Cooking for Christmas: Christmas Baking and Edible Gifts Alison has provided guidelines on:
  • Washing Fruit
  • Baking Powder
  • Curdling
  • Tin Sizes
  • Papering Tins
  • Cooking Times
  • Splits and Peaks
  • Maturing and Storage
  • Alcohol
  • First Aid for Dry Cakes
