About the Author

Allyson Gofton has been cooking for New Zealanders for over 15 years During her varied career she has worked with Tui Flower, and later Robyn Martin, at the NZ Womans Weeklys Test Kitchens, assisted Graham Kerr both here and abroad, and became the Principal of Epicurean Workshop and Chief Executive Officer of the New Zealand Nutrition Foundation before moving to advertising and becoming the Public Relations Manager at the Carlton Hotel. In between all of this, Allyson has been Food Editor for Next Magazine since its inception in March 1991. She is also currently presenter of the top rating Food in a Minute series (in its fifth year) and the best–selling author of numerous books. Her Food in a Minute cookbooks topped the 1998 bestseller lists, selling close to 200,000 copies.

Introduction

The last 12 months on Food in a Minute have continued to be as much fun, though also as much hard work, as ever, as I cook up and test new ideas for family foods with products from the Heinz Wattie"s stable.

Through my charity demonstration tours of the country I have been able to talk to many New Zealanders about the challenges facing them every night at around 5.30 p.m., when the bewitching hour of dinner is upon us.

I can tell you that from Northland to Southland you are all saying very much the same thing. We"re looking for quick, healthy meals that fit within the budget and that can be served to family members and also be easily jazzed up when friends come to dinner.

As I have more ideas than we can present on Food in a Minute, this book of family food includes dishes that have not been shown on television. I have added a chapter for breakfast, the most important meal of the day that is so often forgotten in the rush to get to school or work – quick ideas to charm the most ardent non–breakfasting teenager or partner.

Then there"s the school lunch problem. When I was a teenager, there was nothing like the choice we have today, yet we still seem to be lost when it comes to finding ways to encourage children to have a healthy lunch. Hence the school lunch chapter. After school snacks are another perplexing issue. They need to be filling, healthy and quick, so there are suggestions for those too.

Our dinner chapter includes my favourites from the last 12 months, and also some new ideas. Desserts do not often feature on television, so I have added a few more of my family specials here.

New to this Food in a Minute book, but which I am confident will be a great help to many families, are nutrition tips throughout. Nutrition is quite a complex matter, so I have asked registered dietitian and colleague Carol Wham to prepare the tips for me. These bite–sized pieces of nutrition information with each recipe will help you understand the ways many foods help our bodies and why they are so important to us.

As always, I wish to thank the Food in a Minute production team who work on every episode, paying great attention to detail: Mike O"Sullivan, executive producer – Colin Follas, producer – Graeme Simpson, director – Rhys Duncan, director of photography – Bernie Wright, sound recordist – Adrian Greshoff, gaffer (lighting) – Suzanne Arts, make–up and wardrobe – and Sandra Hunt, production manager.

This year I have managed to meet New Zealanders in Culverden, Invercargill, Ashburton, Greymouth, Nelson, Blenheim, Ngatea, Napier and Matamata.

And last but not least, as they are the most important, is the Food in a Minute team at Heinz Wattie"s, led by John Macdonald and assisted by home economist Di Handley. They are still as committed as ever to Food in a Minute as we now enter our fourth year! Our much–loved brand, Wattie"s, continues to be innovative with new product ranges and constantly looks for ways to improve existing ranges for consumer satisfaction. It is a great company to work with.
