KOTO is an inspiring illustrated collection of travelogue and authentic recipes from throughout Vietnam. Ordered by region, and with a focus on the foods particular to each, the narrative weaves personal stories with history and a culinary appreciation of the markets, traditions and food of daily life in Vietnam. Each regionally based chapter will begin with an introduction and a discussion on a feature ingredient. KOTO has around 80 recipes ranging from Coconut Prawns from the coastal regions to the inland Chicken and Lotus Seed Broth, as well as a number of shorter chapters on traditional drinks and ways of presenting rice. The recipes are beautifully photographed as well as many travel shots of the people, foods and places in the various regions of Vietnam all incorporated in the books gorgeous contemporary design. All the recipes are very clear and easy to follow with suggested replacements for those ingredients that may be a little more diffi cult to find for the average home cook in the comprehensive glossary at the end of the book.

About the Author

Chef Tracey Lister knows how to shop, cook and eat in Vietnam. After 15 years in the Melbourne restaurant scene, Tracey took a two–year sabbatical in Hanoi, and was determined to put her extensive hospitality experience to good use. Her opportunity came in the form of the role of fi rst chef/trainer KOTO, a grass–roots charity that helps street kids through vocational training. Traceys time at KOTO allowed her to develop a deep appreciation of Vietnamese cuisine. Through research and professional relationships, Tracey has continued to explore the place of food in Vietnamese history and culture, from street stalls and market shopping to age–old family recipes and fi ne restaurants.
