Mum's Favourite Recipes

Mums Favourite Recipes, ISBN 9781920989811 and books by Bill Tikos on sale at thebookshelf.co.nz

Remember the trifle your mother used to make for her dinner parties? Or the roast beef and Yorkshire pud for family lunch on Sundays? There was comforting chicken soup when you were sick, and perhaps a banana cake to help mend a broken heart. Most of us have treasured memories of our mum in the kitchen, cooking our favourite dish. The recipe might have been passed down from her mum or simply torn out of a magazine, but she had somehow made it her own.

In this book 80 leading chefs, celebrities and ordinary Australians share with us culinary secrets from their greatest source of inspiration – Mum. These are much–loved, much–cooked recipes from all kinds of households and from every corner of the globe. Contributors include Stephanie Alexander, Maggie Beer, Serge Dansereau, Jill Dupleix, Terry Durack, Guy Grossi, Dorinda Hafner, David Herbert, Iain Hewitson, Christine Manfield, Stefano Manfredi, Sarah OHare, Jamie Oliver, Loretta Sartori and Alla Wolf Tasker. And their mums, of course.

Extract

My many memories of growing up in Melbourne in the seventies and eighties are dominated by the image of my mother busy cooking in the kitchen. In our house, the kitchen was more than just a place to prepare food: it was the epicentre of family life. For Greeks, food is as much about bringing people together as it is about nourishing the body. For Mum, food and cooking are a celebration of life and an expression of her love for her family and friends. She always cooked extra (and still does) in case one of my countless uncles, aunties or cousins dropped in. And drop in they did – particularly when they heard she was making her legendary baklava.

This book pays tribute not only to my mother but to many other mums too. Alla Wolf–Tasker recalls summer afternoons in Daylesford where family friends came to share her Russian mother"s wonderful delicacies. Guy Grossi remembers with great affection the comforting alamari pasta his mother would serve every Easter. Dorinda Hafner says her mum"s west African pink risotto was served at just about every special occasion and became like another member of the family … The list is endless.

Of course, star chefs and celebrities are not the only ones who have been inspired by their mums" cooking. Tucked away in most kitchens there"s a well–worn exercise book filled with recipes – hand written, cut from magazines and newspapers – passed down from grandmother to mother to daughter (or son), a treasure trove of culinary secrets. But secrets they are no longer, thanks to the generosity of this book"s contributors in sharing their much–loved family recipes.

Mum"s the word no more.
