As the founder and director of The Crabapple Cupcake Bakery and author of this very special cupcake book, I am delighted and proud to share with you many of the cupcake recipes that I produce at the bakery. The recipes have been adapted so that you can create small numbers of these cupcakes and layer cakes for your family and friends to wow over, and you can be proud to say I made them myself.

My philosophy has always been that you should have fun when baking and decorating cakes. I believe in the real emotions that are baked and decorated into your beautiful cake or cupcakes, rather than any hard and fast rules. The best advice I can give you is to have patience. Dont be disappointed if your first attempt is not exactly like the photograph – remember, I have had years of practice. I am not industry trained and it took me more than a year to perfect the vanilla cupcake. So, if you are not entirely happy with your first effort, have a cup of tea (from a china cup of course!), enjoy tasting what you have made, and then try again.
