It is also quite refreshing as a warm weather salad and serves well for a picnic or barbecue.2 tablespoons rice wine vinegar 1/2 teaspoon ground ginger 1/4 teaspoon sugar 2 1/2 cups napa cabbage (Chinese cabbage), shredded 1/2 cup grated carrots 1/4 cup diced scallions (immature or green onions) 1/4 cup diced red bell pepper 2 tablespoons chopped cilantro leaves In a large mixing bowl, combine the vinegar, ginger and sugar. Add the cabbage, carrots, scallions, red bell pepper and the cilantro and toss well. Cover and refrigerate for at least an hour before serving.
