Trout with Flair & Taste is a beautifully photographed cookbook filled with exciting ways to prepare your trout. My name is Jean Louis Malla. Originally I came from France, where I served my chef apprenticeship at the Nice Hotel School.

My father was a keen fly fisherman and I have followed in his footsteps, actively fly fishing for the past 25 years in various streams, lakes and rivers.

I tie my own flies and have developed some patterns of my own. Over the years I have caught thousands of trout. To date my largest catch is a 6.5 kg rainbow taken from Lake Sorell in the Central Highlands of Tasmania.

I now live in Tasmania and from my background as a chef I have learned to cook trout in number of different ways.

I hope the following recipes will help you to cook trout with flair and taste.

It is possible to purchase sea run trout which are farmed in the cool waters of Southern Tasmania and these, too, make fine table fish.

WHERE TO GET YOUR TROUT

For most people it is too difficult to catch your own trout. Trout are farmed all around Australia from our famous sea bred fish the Atlantic salmon and rainbow trout to the beautiful trout from our inland hatcheries.

Trout are available at markets, seafood shops, butcher shops, trout hatcheries and supermarkets. They an superb food and as healthy a dish as you could want! I personally recommend Australian hatchery trout as the best in the world. With catch and release playing such an important role in our wild fisheries now these hatcheries give everyone the opportunity to try this famous and delicious fish.

Personally I prefer to catch my own, but only take what I need for my family and let the rest go to swim I another day.
